Bisou

Bisou in Paris, France, is not your average cocktail bar. They have a whole new approach to the cocktail, adapted to your preferences and the season. Instead of a menu, you are free to share with the bartenders your tastes, preferences, and even mood and they’ll craft you a bespoke cocktail, made with seasonal ingredients. The bartenders at Bisou (kiss in French) are all very different, but what they share in common is a passion for creativity and service. They know each of the 200 bottles in the bar by heart and know exactly how to mix them in cocktails or introduce you to them with a tasting. The bar at Bisou is a marble bar counter and the venue has a pink-hued awning. It is a charming, small place and describes itself as “sexy and sustainable”.

At Bisou they care about our planet. That is why they always choose seasonal and local ingredients. With these they produce (in house) juices, syrups and other liquids are made. They strive to make use of every bit of every fruit or vegetable. For example, they dehydrate the remains of fruit to create an edible garnish for a future cocktail. No plastic straws are used, but metal straws are served with your cocktail. Not only is this more ecologically responsible, it looks much nicer too.

If you are in for a little bite, you can choose from several “small” boards. There are vegan options, but vegan or not, all are hearty and made of fresh, local ingredients.
